First, a few words on the history of this delicacy... The story of crêpes goes back to the Roman Times, when they were eaten during the Lupercales festival, to celebrate fertility. This immoral festival was then prohibited by the Pope Gelase and replaced by La Chandeleur, celebrating the purification of Mary. However, the superstition is still alive:turning a crêpe with a silver or gold coin in you hand will bring prosperity and wealth in your family for one year!
Crêpes can be both a main course (stuffed with ham and cheese for example) and a dessert. The base remains the same in both cases, but for the sweet ones, you can add vanilla, cinnamon, etc.
For 30 crêpes:
- 4 eggs
- 500 gms of flour
- 1 liter of milk
- water
- 1 tea spoon of baking powder
- for dessert crêpes, as per your taste: vanilla essence, cinnamon, orange blossom, rhum.
In a ball, mix together the flour and baking powder. Add eggs. Little by little, add milk and end with some water.
Rub a skillet with butter. Cook one pancake at the time over moderate heat. It's ready!
